Fresh poultry can be safely frozen in an airtight container for 6 to 9 months from its sell by date. When you are ready to cook frozen poultry, defrosting it overnight in the refrigerator is your best bet. For rapid defrosting, soak in cold water in an airtight packaging or in a leak-proof bag. Submerge the bird or cut-up parts in cold water, changing the water every 30 minutes to be sure it stays cold.
