Empire Kosher Poultry recommends following USDA guidelines for safe food handling and preparation. USDA recommends cooking chicken and turkey to an internal temperature of 165° F. Once cooked, chicken and turkey should be kept above 140°F or below 40°F to ensure safe consumption.
