Mediterranean Turkey Schnitzel

 INGREDIENTS 

Schnitzel

1 package Empire Kosher® Turkey Tenders

1 tablespoon garlic powder

1 teaspoon smoked paprika

1 teaspoon cumin

1 teaspoon turmeric

1 teaspoon kosher salt

½ cup all-purpose flour

3 eggs

2 cups plain panko breadcrumbs

¼ cup canola oil


Lemon Sesame Dipping Sauce

¼ cup tahini

3 tablespoons iced water

2 tablespoons fresh lemon juice

2 tablespoons extra-virgin olive oil

1 teaspoon roasted or toasted sesame oil

1 tablespoon honey

1 garlic clove, crushed

¼ teaspoon kosher salt

INSTRUCTIONS 

  1. Slice turkey tenders in half, longways, and pound to even thickness.

  2. In a small bowl, combine the garlic powder, paprika, cumin, turmeric, and salt.

  3. Season the turkey with spices on both sides. Set aside.

  4. To prepare a dredging station, scoop the flour into one bowl. Beat the eggs in another bowl and place it next to the flour. Add the breadcrumbs to a third bowl next to the eggs.

  5. Take one piece of turkey; coat both sides with the flour and shake off excess.

  6. Dip the turkey in the egg bowl and shake off excess.

  7. Coat the turkey with the breadcrumbs on both sides. Repeat with the remaining pieces.

  8. In a large skillet, heat 1/4 cup canola oil over medium-high heat.

  9. Gently add a few pieces of turkey into the pan, being careful not to overcrowd the pan as it lowers the oil temperature making them soggy.

  10. Cook for 2-3 minutes on each side until golden brown and internal temperature reaches 165° F.

  11. Place the fried schnitzel on a tray lined with a paper towel to drain excess oil.

  12. For the dipping sauce, whisk all ingredients together to make a runny consistency and serve with schnitzel.

The festivities at Chanukah make for a beautiful, bright holiday when you can share (whether in-person or virtually) the comforting warmth of candles and heart-warming traditional food—like schnitzel. This year I’m making Empire turkey tenders with an extra flavor burst using Mediterranean spices. You can make this turkey tender schnitzel the centerpiece of your holiday dinners, or for a casual appetizer, cut into smaller pieces and just start dipping!
