Turkey Pasta Salad
2-1/2 cups
tri-colored parve rotini pasta, cooked and drained
2 cups cold, cubed Empire Kosher Mini Smoked or Honey Smoked Turkey Breast
1/2 cup red onions, thinly sliced
1/4 cup celery, thinly sliced
1/4 cup fresh parsley, chopped
1-1/2 teaspoons fresh tarragon, basil, oregano or dill, chopped
1 tablespoon oil
2 tablespoons kosher tarragon vinegar
1 tablespoon lemon juice
2 tablespoons reduced calorie mayonnaise
In a large bowl, combine pasta, turkey, onions, celery, parsley and herbs.
In a small bowl, combine remaining ingredients. Fold into turkey pasta
mixture, cover and refrigerate. |
